What kind of timber joints (e.g. butt joint, tongue and groove joint) are to a high degree of difficulty to do?

The single most difficult "timber " joint is the saddle notch on log corners. There is a homemade scribe tool used to get started after that it's all up to the carpenter as timber dimensions vary and no two cuts are the same to get a clean fit. Mortise & tenon, T &G and compound cuts all use specific configurations and are easily accomplished with power tools. The saddle notch is done by hand repeatedly rolling the timber in and out to check for fit.

Why do you want to know? Without a context, it's hard to answer your question. Typically, I'd say that a sliding dovetail joint is the hardest to do by hand but fairly easy to do with a power router. The most challenging joints are probably dovetails, mortice and tenon, and compound angle roofing joints.
